What kinds of things were catapulted in medieval times?

Anything heavy, (boulders being the most obvious) heavy & wrapped in flammable material plus the odd rotten carc - cattle, sheep or even a decaying body or two of one of the defending sides comrades, just to raise morale a little. I don't think they were that picky to be honest. Even during the battle of Waterloo some 300 - 400 years after 'Medieval times,' some British cannons, after running out of ammunition used anything that could be forced down a cannon, imagine being hit full on by a volley of iron horseshoes or smashed crockery fragments mixed with nails and gl!
